Meet Midnight Tonic, Our First Espresso Tonic

We wanted something for guests who love the bitterness of espresso but not necessarily the milk. Eleven syrup batches later, blackcurrant and torched rosemary won out.

It's built to order, over hand-cracked ice, finished tableside with a rosemary sprig held briefly over an open flame — just enough to release the oils, not to char it.
