Sourcing Notes: A Season in Yirgacheffe

This year's Yirgacheffe lot comes from a co-operative of around 400 smallholder farms, each contributing cherries to a shared washing station perched above the valley.

We paid above the Fairtrade minimum again this year, and for the first time, funded a second solar dryer for the co-op — cutting drying time and protecting the beans from sudden rain during peak season.

In the cup: jasmine up front, a bergamot brightness through the middle, and a black-tea finish that lingers pleasantly bitter.
